Blueberry Pancakes
Ingredients
1 scoop of your favorite protein powder.
2 eggs
3 table spoons almond meal
2 teaspoons baking powder
1 teaspoon vanilla extract
3 tablespoons honey
1/4 teaspoon salt
1/4 cup fresh blueberries
Milk (preferably almond milk)
Nonstick cooking spray (or butter)
In a medium bowl, whisk together the eggs, protein powder, almond milk, baking powder, and vanilla extract.
Mix in the almond meal, honey, and salt.
Add the blueberries
Coat a large, nonstick pan with cooking spray or butter, and heat over low-medium heat.
Scoop 2 tablespoons of batter onto the pan per pancake.
Cook the pancakes on each side for 2 to 3 minutes, or until lightly golden brown.
