Blueberry Pancakes

Ingredients

  • 1 scoop of your favorite protein powder.

  • 2 eggs

  • 3 table spoons almond meal

  • 2 teaspoons baking powder

  • 1 teaspoon vanilla extract

  • 3 tablespoons honey

  • 1/4 teaspoon salt

  • 1/4 cup fresh blueberries

  • Milk (preferably almond milk)

  • Nonstick cooking spray (or butter)

  1. In a medium bowl, whisk together the eggs, protein powder, almond milk, baking powder, and vanilla extract.

  2. Mix in the almond meal, honey, and salt.

  3. Add the blueberries

  4. Coat a large, nonstick pan with cooking spray or butter, and heat over low-medium heat.

  5. Scoop 2 tablespoons of batter onto the pan per pancake.

  6. Cook the pancakes on each side for 2 to 3 minutes, or until lightly golden brown.
