Cauliflower Mac & Cheese

Ingredients

  • 1 head of cauliflower

  • 1 tablespoon olive oil

  • Crushed tortilla chips

  • 1/2 cup shredded cheddar cheese

  • 1/2 cup heavy cream

  • 1/4 cup shredded parmesan cheese

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon garlic powder

  • Salt and pepper (to taste)

  1. Preheat the oven to 400°F. Cut the cauliflower into small pieces, about 1/2 to 1 inch.

  2. Mix florets in olive oil and place them on a baking sheet with foil. Bake for 15 to 20 minutes or until tender.

  3. Place the cheddar cheese, heavy cream, parmesan cheese, mustard, garlic powder, salt, and pepper into a small pot over medium heat. Cook until melted and smooth.

  4. Remove the florets from the oven and place in a large bowl.

  5. Mix in the melted cheese sauce and crushed tortilla chips.
