Cauliflower Mac & Cheese
Ingredients
1 head of cauliflower
1 tablespoon olive oil
Crushed tortilla chips
1/2 cup shredded cheddar cheese
1/2 cup heavy cream
1/4 cup shredded parmesan cheese
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
Salt and pepper (to taste)
Preheat the oven to 400°F. Cut the cauliflower into small pieces, about 1/2 to 1 inch.
Mix florets in olive oil and place them on a baking sheet with foil. Bake for 15 to 20 minutes or until tender.
Place the cheddar cheese, heavy cream, parmesan cheese, mustard, garlic powder, salt, and pepper into a small pot over medium heat. Cook until melted and smooth.
Remove the florets from the oven and place in a large bowl.
Mix in the melted cheese sauce and crushed tortilla chips.
